Fourth of July Benediction

I woke up on the morning of July 4th with a bolt of inspiration–I wanted to conquer one of my favorite breakfast dishes–the eggs benedict. The Hollandaise sauce was the only component I wasn't familiar and turns out not to be too difficult with help of some online recipes.

I hopped on the phone and pulled together Dave, Mihae, Laura, and I all on our Vespas and we headed down to Pike's Place Market. I've never gone to Pike's Place with reason of actual grocery shopping and it is SO MUCH FUN.

Dave and Mihae went off to hunt down some English muffins–or considering that only bakery in the market is French, freshly baked bread. Laura and I went to find some smoked salmon, plus eggs and butter. We jostled through the narrow corridors of the market, standing on our tiptoes to look over the shoulders of leering tourists to find our various ingredients. There's a plethora of vegetable stands, fruit stands, and seafood shops, but surprisingly smoked salmon took a little effort to find. We finally came across someone who specialized in smoked salmon in the area across from the main market, who handed us both samples and we replied with a credit card. A "creamery" didn't take long to find, with 10 types eggs and other various dairy products.

We all ended up meeting in the spice shop, where we picked up a few herbs needed for seasoning and headed home to produce the masterpiece below.

A homemade Smoked Salmon Eggs Benedict. =)
